Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 cup sun-dried tomatoes (packed in oil), drained and chopped
2 cups fresh spinach, chopped
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
1 cup grated Parmesan cheese
½ cup shredded mozzarella cheese
Fresh basil, chopped (for garnish)
Instructions:
Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray. Prep Time: 5 minutes
Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning, then sear them for 3–4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside. Searing Time: 8 minutes
In the same skillet, add the remaining olive oil and sauté the garlic for 1–2 minutes until fragrant. Garlic Sautéing Time: 2 minutes
Add the chopped sun-dried tomatoes and spinach to the skillet, cooking until the spinach wilts (about 2–3 minutes). Veggie Cooking Time: 3 minutes
Stir in the heavy cream and chicken broth, bringing the mixture to a simmer. Cook for 2–3 minutes to thicken the sauce. Sauce Simmer Time: 3 minutes
