Mediterranean Breakfast Plate with Sunny-Side Eggs & Asparagus

This dish is a balanced, savory, and elegant breakfast or brunch plate, featuring sunny-side-up eggs, pan-seared asparagus, creamy avocado, prosciutto, olives, fresh greens, and grilled tomato. It combines protein, healthy fats, and vegetables in a light Mediterranean style.


Ingredients (Serves 1)

Main Components

  • 2 large eggs

  • 1/2 bunch asparagus (6–8 spears, trimmed)

  • 1/2 ripe avocado

  • 2–3 slices prosciutto

  • 1 small tomato (halved)

  • 1 handful arugula (rocket)

  • 6–8 mixed olives (green & black)

Cooking & Seasoning

  • 1–2 tablespoons olive oil

  • Salt, to taste

  • Freshly ground black pepper

  • Chili flakes (optional)

  • Dried or fresh parsley (for garnish)


Instructions

Step 1: Cook the Asparagus

  1. Heat 1 tablespoon olive oil in a pan over medium heat.

  2. Add asparagus spears and sauté for 5–7 minutes, turning occasionally, until tender and lightly charred.

  3. Season with salt and pepper.

  4. Remove from pan and set aside.


Step 2: Grill or Pan-Sear the Tomato

  1. In the same pan, place tomato halves cut-side down.

  2. Cook for 2–3 minutes until softened and slightly caramelized.

  3. Remove and set aside.


Step 3: Fry the Eggs

  1. Add a little more olive oil to the pan if needed.

  2. Crack the eggs gently into the pan.

  3. Cook over low–medium heat until whites are set but yolks remain runny (about 3–4 minutes).

  4. Season with salt, pepper, and chili flakes if desired.


Step 4: Prepare the Avocado & Greens

  1. Slice the avocado in half, remove the pit, and cut into slices.

  2. Season lightly with salt and pepper.

  3. Rinse and dry the arugula.


Step 5: Assemble the Plate

  1. Place the sunny-side-up eggs on the plate.

  2. Arrange asparagus next to the eggs.

  3. Add avocado slices, prosciutto, arugula, olives, and grilled tomato around the plate.

  4. Sprinkle with parsley and a light drizzle of olive oil.
