1 small tomato (halved)

1 handful arugula (rocket)

6–8 mixed olives (green & black)

Chili flakes (optional)

Dried or fresh parsley (for garnish)
Instructions

Step 1: Cook the Asparagus

Heat 1 tablespoon olive oil in a pan over medium heat.

Add asparagus spears and sauté for 5–7 minutes, turning occasionally, until tender and lightly charred.

Season with salt and pepper.

Remove from pan and set aside.
Step 2: Grill or Pan-Sear the Tomato

In the same pan, place tomato halves cut-side down.

Cook for 2–3 minutes until softened and slightly caramelized.

Remove and set aside.
Step 3: Fry the Eggs

Add a little more olive oil to the pan if needed.

Crack the eggs gently into the pan.

Cook over low–medium heat until whites are set but yolks remain runny (about 3–4 minutes).

Season with salt, pepper, and chili flakes if desired.
Step 4: Prepare the Avocado & Greens

Slice the avocado in half, remove the pit, and cut into slices.

Season lightly with salt and pepper.

Rinse and dry the arugula.
Step 5: Assemble the Plate

Place the sunny-side-up eggs on the plate.

Arrange asparagus next to the eggs.

Add avocado slices, prosciutto, arugula, olives, and grilled tomato around the plate.

Sprinkle with parsley and a light drizzle of olive oil.
