Ingredients (Serves 2–3)
For the Meatballs

400 g ground beef or lamb (or a mix)

1 small onion, finely grated

2 cloves garlic, minced

1 egg
-
40 g breadcrumbs

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon ground cumin

1/2 teaspoon paprika

Salt and black pepper to taste

Fresh parsley, finely chopped
For the Roasted Potatoes

500 g baby potatoes, halved

2 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried oregano
For the Tzatziki Sauce

200 g Greek yogurt
-
1/2 cucumber, grated and squeezed dry

1 clove garlic, finely minced
-
1 tablespoon olive oil
-
1 tablespoon lemon juice
-
Salt to taste

Fresh dill or parsley, chopped
For the Fresh Salad Components

1 cucumber, chopped

200 g cherry tomatoes, quartered

1/4 red onion, finely sliced

Mixed green lettuce

Kalamata olives
-
Fresh parsley, chopped
Instructions

Step 1: Roast the Potatoes

Preheat the oven to 200°C (400°F).

Toss potatoes with olive oil, salt, pepper, and oregano.

Spread on a baking tray in a single layer.

Roast for 30–35 minutes, turning once, until golden and crispy.
Step 2: Prepare the Meatballs

In a large bowl, combine ground meat, grated onion, garlic, egg, breadcrumbs, olive oil, oregano, cumin, paprika, salt, pepper, and parsley.

Mix gently until just combined.

Shape into small meatballs (about golf-ball size).
Step 3: Cook the Meatballs

Heat a skillet over medium heat with a little olive oil.

Cook meatballs, turning occasionally, for 10–12 minutes until browned and fully cooked.

Remove from heat and set aside.
Step 4: Make the Tzatziki

In a bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, salt, and herbs.

Chill for at least 10 minutes to allow flavors to develop.
Step 5: Assemble the Bowl

Arrange roasted potatoes in the bowl.

Add meatballs, cucumber, tomatoes, lettuce, olives, and red onion.

Spoon tzatziki sauce into the center.

Garnish with fresh parsley and a drizzle of olive oil.
