Shrimp Stir-Fried Noodles (Asian-Style)

Description

This dish features springy stir-fried noodles coated in a rich soy-based sauce, combined with juicy shrimp, crispy egg tofu, and fresh bok choy. The flavor is savory, slightly sweet, and deeply umami, with a glossy finish and classic wok aroma.


Ingredients (Serves 2)

Main Ingredients

  • 200 g egg noodles or wheat noodles

  • 200 g large shrimp, peeled and deveined

  • 1 tube egg tofu, sliced into thick rounds

  • 2–3 heads baby bok choy, halved

  • 2 cloves garlic, minced

  • 1 small onion or shallot, sliced

  • 2–3 tablespoons cooking oil


Sauce

  • 2 tablespoons dark soy sauce

  • 1½ tablespoons light soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon sugar

  • 1 teaspoon chili oil (optional)

  • 3–4 tablespoons water or stock


Shrimp Marinade

  • 1/2 teaspoon salt

  • 1/4 teaspoon white pepper

  • 1 teaspoon light soy sauce


Instructions

Step 1: Cook the Noodles

  1. Bring a pot of water to a boil.

  2. Cook noodles until just tender.

  3. Drain and rinse briefly with cold water.

  4. Toss with a little oil to prevent sticking. Set aside.


Step 2: Prepare the Shrimp

  1. Marinate shrimp with salt, white pepper, and light soy sauce for 10 minutes.


Step 3: Fry the Egg Tofu

  1. Heat 1 tablespoon oil in a wok over medium heat.

  2. Fry egg tofu until golden on both sides.

  3. Remove and set aside.


Step 4: Cook the Shrimp

  1. Add a little oil to the wok.

  2. Sauté shrimp over medium-high heat for 1–2 minutes per side until pink and just cooked.

  3. Remove shrimp and set aside.


Step 5: Stir-Fry the Noodles

  1. Add remaining oil to the wok.

  2. Add garlic and onion, stir-fry until fragrant.

  3. Add noodles and pour in all sauce ingredients.

  4. Toss quickly over high heat until noodles turn glossy and evenly coated.


Step 6: Combine Everything

  1. Add shrimp, fried egg tofu, and bok choy.

  2. Stir-fry for 1–2 minutes until bok choy wilts but stays green.

  3. Taste and adjust seasoning if needed.
