This Garlic Parmesan Chicken Meatloaf is juicy, flavorful, and a lighter twist on classic meatloaf. Packed with garlic, herbs, and two kinds of cheese, it’s perfect for a comforting family dinner while still feeling fresh and modern.


Ingredients

  • 1.5 lbs ground chicken

  • 1/2 cup breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup shredded mozzarella cheese (plus extra for topping)

  • 3 cloves garlic, minced

  • 1 egg

  • 1/4 cup milk

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon Italian seasoning

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.


2. Prepare the Meatloaf Mixture

In a large mixing bowl, combine:

  • Ground chicken

  • Breadcrumbs

  • Parmesan cheese

  • Shredded mozzarella

  • Minced garlic

  • Egg

  • Milk

  • Chopped parsley

  • Italian seasoning

  • Salt and black pepper

Gently mix everything together until just combined. Avoid overmixing, as this can make the meatloaf dense.

3. Shape the Meatloaf

Transfer the mixture into the prepared loaf pan and gently press it into an even loaf shape. Smooth the top.


4. Add Cheese Topping

Sprinkle extra shredded mozzarella cheese evenly over the top of the meatloaf for a golden, cheesy finish.


5. Bake

Place the meatloaf in the oven and bake for 45–55 minutes, or until the internal temperature reaches 165°F (74°C) and the top is lightly golden.

If desired, broil for the last 2–3 minutes to achieve a bubbly, lightly browned cheese topping.


6. Rest and Serve

Remove the meatloaf from the oven and let it rest for 5–10 minutes before slicing. This helps the juices redistribute.
