Ingredients (Serves 4 sandwiches)

Main Ingredients

  • 4 large butter croissants

  • 8 slices bacon

  • 6 large eggs

  • 2 tablespoons milk or cream

  • 60–80 g sliced cheddar or American cheese

  • 1 cup arugula or mixed greens

Cooking & Seasoning

  • 1 tablespoon butter (for eggs)

  • Salt, to taste

  • Freshly ground black pepper

Optional Add-ons

  • Dijon mustard or mayonnaise

  • Honey or maple syrup (for a sweet-savory touch)

Step 1: Cook the Bacon

  1. Heat a skillet over medium heat.

  2. Add bacon slices and cook until crispy and golden, turning occasionally.

  3. Transfer to a paper towel-lined plate to drain excess fat.

  4. Set aside.


Step 2: Prepare the Scrambled Eggs

  1. In a bowl, whisk eggs with milk, salt, and black pepper.

  2. Heat butter in a non-stick pan over low to medium-low heat.

  3. Pour in eggs and cook gently, stirring slowly with a spatula.

  4. Cook until eggs are soft, creamy, and just set.

  5. Remove from heat immediately to avoid overcooking.


Step 3: Warm the Croissants

  1. Preheat oven to 170°C (340°F).

  2. Slice croissants horizontally.

  3. Warm in the oven for 3–4 minutes until lightly crisp outside.


Step 4: Assemble the Sandwiches

  1. Place the bottom half of each croissant on a board.

  2. Add a small handful of arugula.

  3. Spoon scrambled eggs generously on top.

  4. Add cheese slices while eggs are hot so they melt slightly.

  5. Layer crispy bacon on top.

  6. Add mustard or mayonnaise if desired.

  7. Close with the croissant tops.
