Description

This dessert is a strawberry banana cream cake with a buttery biscuit crust, layers of fresh strawberries and bananas, smooth vanilla cream filling, whipped cream topping, and a light strawberry sauce drizzle. It is creamy, fruity, and refreshing—perfect for summer desserts or café-style plating.


Ingredients (Serves 6–8)

For the Crust

  • 200 g graham crackers or digestive biscuits

  • 100 g unsalted butter, melted

For the Cream Filling

  • 250 g cream cheese, softened

  • 250 ml heavy whipping cream (cold)

  • 80 g powdered sugar

  • 1 tsp vanilla extract

For the Fruit Layers

  • 250 g fresh strawberries, sliced

  • 2 ripe bananas, sliced

For the Topping

  • Extra whipped cream (about 150 ml whipped)

  • Whole strawberries (for garnish)

  • Banana slices (for garnish)

  • Crushed biscuits or cookie crumbs

Optional Strawberry Sauce

  • 100 g strawberries

  • 2 tbsp sugar

  • 1 tbsp lemon juice


Instructions

1. Prepare the Crust

  1. Crush the biscuits into fine crumbs using a food processor or rolling pin.

  2. Mix with melted butter until evenly coated.

  3. Press the mixture firmly into the bottom of a springform pan or rectangular mold.

  4. Chill in the refrigerator for 20–30 minutes to set.


2. Make the Cream Filling

  1. In a bowl, beat the cream cheese until smooth.

  2. Add powdered sugar and vanilla extract; mix well.

  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.

  4. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.


3. Assemble the Cake

  1. Spread a thin layer of cream filling over the chilled crust.

  2. Arrange a layer of sliced strawberries evenly.

  3. Add a layer of banana slices.

  4. Cover with more cream filling.

  5. Repeat layers if desired, finishing with cream on top.

  6. Refrigerate for at least 4 hours (preferably overnight) to fully set.


4. Prepare Strawberry Sauce (Optional)

  1. Cook strawberries, sugar, and lemon juice over medium heat for 5–7 minutes.

  2. Mash slightly and simmer until thickened.

  3. Let cool completely before using.


5. Decorate and Serve

  1. Pipe or spread whipped cream on top.

  2. Garnish with whole strawberries, banana slices, and crushed biscuits.

  3. Drizzle strawberry sauce lightly over the cake before serving.

  4. Slice with a warm knife for clean layers.
