Crispy Buffalo Chicken Bites with Creamy Ranch Dip
Ingredients
For the Chicken

500 g (1 lb) boneless chicken thighs or chicken breast, cut into bite-size pieces

1 cup all-purpose flour

½ cup cornstarch

1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp paprika
-
½ tsp black pepper
-
½ tsp salt
-
½ tsp chili powder (optional)

1 cup cold water (or buttermilk for extra tenderness)

Vegetable oil, for deep frying
For the Buffalo Sauce

½ cup hot sauce (Frank’s RedHot style works best)

3 tbsp unsalted butter
-
1 tbsp honey or brown sugar
-
1 tsp garlic, finely minced
For the Ranch Dip

½ cup mayonnaise
-
½ cup sour cream
-
1–2 tbsp milk (to thin)
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tbsp chopped fresh dill or parsley

Salt and pepper, to taste
Instructions

1. Prepare the Chicken Batter
In a large bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, pepper, and chili powder.
Slowly whisk in cold water (or buttermilk) until a thick, smooth batter forms.
Add chicken pieces and coat well. Let rest for 10–15 minutes for better texture.
2. Fry the Chicken
Heat oil in a deep pan or fryer to 175°C / 350°F.
Carefully drop chicken pieces into the oil in batches.
Fry for 5–7 minutes, turning occasionally, until deep golden brown and crispy.
Remove and drain on a wire rack or paper towels.
3. Make the Buffalo Sauce
In a small saucepan over low heat, melt butter.
Add hot sauce, honey, and minced garlic.
Stir until smooth and slightly thickened. Remove from heat.
4. Coat the Chicken
Place fried chicken into a large bowl.
Pour warm buffalo sauce over the chicken and toss gently until evenly coated and glossy.
5. Make the Ranch Dip
In a bowl, whisk mayonnaise, sour cream, milk, garlic powder, onion powder, herbs, salt, and pepper.
Chill for 10 minutes for best flavor.
Serving
Serve the crispy buffalo chicken bites hot with ranch dip on the side.
Optional garnishes: chopped parsley, extra chili flakes, or celery sticks.
