Chicken Parmesan with French Fries
Ingredients (Serves 2–3)
For the Chicken:

2 large chicken breasts, butterflied and pounded thin

Salt and black pepper, to taste

½ cup all-purpose flour
-
2 large eggs
-
2 tablespoons milk
-
1 cup breadcrumbs (panko preferred)
-
½ cup grated Parmesan cheese
-
1 teaspoon garlic powder
-
1 teaspoon Italian seasoning
-
Vegetable oil, for frying
For the Topping:

1 cup marinara sauce
-
1½ cups shredded mozzarella cheese
-
Fresh basil or parsley, chopped
For the Fries:

3–4 large potatoes, cut into sticks (or frozen fries)

Olive oil
-
Salt
Instructions

1. Prepare the Fries

Preheat oven to 220°C / 425°F.

Toss potato sticks with olive oil and salt.
-
Spread on a baking tray and bake for 30–35 minutes, turning once, until golden and crisp.
(Skip this step if using frozen fries and cook according to package instructions.)
2. Bread the Chicken

Season chicken breasts with salt and pepper.
-
Set up three bowls:

Flour
-
Eggs whisked with milk
-
Breadcrumbs mixed with Parmesan, garlic powder, and Italian seasoning

Dredge each chicken piece in flour, dip in egg mixture, then coat well with breadcrumbs.
3. Fry the Chicken

Heat oil in a large skillet over medium heat.

Fry chicken for 3–4 minutes per side until golden brown and cooked through.

Transfer to a baking dish lined with paper towels.
4. Assemble

Spoon marinara sauce over each chicken cutlet.

Top generously with mozzarella cheese.
5. Bake

Place chicken in the oven at 200°C / 400°F for 8–10 minutes, until cheese is melted and bubbly.
Serving
-
Plate the chicken Parmesan with crispy fries on the side.

Garnish with fresh basil or parsley.

Optional: add cherry tomatoes or a simple green salad for balance.
