GRILLED OYSTERS WITH GARLIC BUTTER SAUCE

INGREDIENTS

  • 10–12 fresh oysters, scrubbed clean

  • Rock salt (for stabilizing oysters while grilling)

Garlic butter sauce

  • 80 g unsalted butter

  • 6–8 cloves garlic, finely minced

  • 1 small shallot, finely minced (optional)

  • 1 tbsp oyster sauce

  • 1 tsp fish sauce

  • ½ tsp sugar

  • ½ tsp chili flakes or finely chopped fresh chili

  • ½ tsp black pepper

Garnish

  • Chopped scallions

  • Fresh chili (optional)


INSTRUCTIONS

Step 1: Prepare the oysters

  • Carefully shuck the oysters, keeping the meat in the deeper shell

  • Discard the top shell

  • Loosen the oyster meat gently without removing it from the shell

  • Place oysters on a tray lined with rock salt to keep them level


Step 2: Make the garlic butter sauce

  • Melt butter in a pan over low heat

  • Add minced garlic and shallot

  • Sauté gently until fragrant and lightly golden (do not burn)

  • Add oyster sauce, fish sauce, sugar, chili, and black pepper

  • Stir well and remove from heat


Step 3: Top the oysters

  • Spoon garlic butter generously over each oyster

  • Make sure each oyster is fully covered with the sauce


Step 4: Grill

  • Preheat grill or oven to 200°C (390°F)

  • Grill oysters for 8–10 minutes

  • Oysters are done when the sauce bubbles and the edges curl slightly


SERVING

  • Garnish with chopped scallions and fresh chili

  • Serve immediately while hot

  • Best enjoyed with lime wedges, cold beer, or white wine
