For the Salad

  • 120 g (4 oz) glass noodles (mung bean vermicelli)

  • 300 g (10 oz) large shrimp, peeled and deveined

  • ½ small red onion, thinly sliced

  • 2–3 red chilies, finely chopped (adjust to taste)

  • 1 stalk celery, thinly sliced (optional)

  • 1 handful fresh mint leaves

  • 1 handful fresh cilantro

For the Dressing

  • 3 tbsp fresh lime juice

  • 2 tbsp fish sauce

  • 1–1½ tsp sugar

  • 1 tsp chili paste or extra chopped chilies (optional)

  • 1 tsp roasted chili powder (optional, Thai-style heat)

1. Prepare the Glass Noodles

Soak glass noodles in hot water for 8–10 minutes until soft.
Drain well and cut into shorter lengths with scissors.


2. Cook the Shrimp

Bring a pot of water to a gentle boil.
Add shrimp and cook for 1–2 minutes until pink and just cooked.
Remove immediately and set aside to cool.


3. Cook the Sausage

Slice sausages and blanch briefly in hot water for 1–2 minutes, or pan-sear lightly if preferred.
Drain well.


4. Make the Dressing

In a bowl, combine lime juice, fish sauce, sugar, chopped chilies, and chili powder.
Stir until sugar dissolves.
Taste and adjust to achieve a balance of sour, salty, sweet, and spicy.


5. Assemble the Salad

In a large mixing bowl, add:

  • Glass noodles

  • Shrimp

  • Sausage

  • Tomato

  • Onion

  • Chilies

  • Celery (if using)

Pour dressing over the salad and toss gently until evenly coated.


6. Finish

Add mint and cilantro last.
Toss lightly to keep herbs fresh.


7. Serve

Serve immediately at room temperature or slightly chilled.
