For the Chicken Salad Filling

  • 250 g (9 oz) cooked chicken breast, finely chopped or shredded

  • ½ cup mayonnaise

  • 2 tbsp Greek yogurt or sour cream

  • ¼ cup celery, finely chopped

  • ¼ cup red bell pepper, finely diced

  • 1 tbsp fresh parsley or dill, chopped

  • 1 tsp lemon juice

  • Salt and black pepper, to taste

For Assembly

  • 4 large butter croissants

  • Extra chopped parsley, for garnish (optional)


Instructions

1. Prepare the Chicken Salad

In a medium bowl, combine mayonnaise, Greek yogurt (or sour cream), lemon juice, salt, and black pepper.
Mix until smooth and creamy.

Add the chopped chicken, celery, bell pepper, and fresh herbs.
Stir gently until all ingredients are evenly coated.

Cover and refrigerate for 15–20 minutes to let the flavors meld.


2. Prepare the Croissants

Slice each croissant horizontally, leaving one side attached if possible to form a pocket.
Lightly toast the croissants if desired for extra texture (optional).


3. Assemble

Generously fill each croissant with the chilled chicken salad mixture.
Arrange on a serving plate and sprinkle with chopped parsley if desired.


4. Serve

Serve immediately or keep chilled until ready to serve.
