Ingredients

700 g (1.5 lb) pork belly, cut into large cubes

12–15 quail eggs, boiled and peeled

2 tbsp cooking oil

2 tbsp sugar (preferably palm sugar or brown sugar)

3 tbsp soy sauce
-
1 tbsp dark soy sauce (for color)

1 tbsp oyster sauce
-
1 tsp fish sauce
-
1 tsp black pepper
-
2 cloves garlic, minced
-
2 shallots, sliced
-
1 small piece ginger, sliced

300 ml (1¼ cups) water or coconut water

Chopped green onions (for garnish)
Instructions

1. Prepare the Pork
Bring a pot of water to a boil.
Add pork belly and blanch for 2–3 minutes to remove impurities.
Drain and rinse with warm water, then set aside.
2. Make the Caramel Base
Heat cooking oil in a deep pan or pot over medium heat.
Add sugar and cook slowly until it melts and turns a deep amber color.
Be careful not to burn it.
3. Sauté Aromatics
Add garlic, shallots, and ginger to the caramel.
Stir quickly until fragrant.
4. Braise the Pork
Add pork belly to the pot and stir well to coat each piece with caramel.
Season with soy sauce, dark soy sauce, oyster sauce, fish sauce, and black pepper.
Pour in water (or coconut water), bring to a gentle boil, then reduce to low heat.
5. Slow Cooking
Cover and simmer for 35–45 minutes, stirring occasionally, until the pork is tender and the sauce thickens.
6. Add Quail Eggs
Add the boiled quail eggs to the pot.
Simmer uncovered for another 10–15 minutes so the eggs absorb the sauce.
7. Finish and Serve
Adjust seasoning if needed.
Garnish with chopped green onions and serve hot.
