Spicy Grilled Chicken Skewers (Paprika & Garlic Style)
Description
These juicy chicken skewers are marinated in a bold blend of paprika, garlic, lemon, and warm spices, then grilled or pan-seared until beautifully charred. Perfect as an appetizer, main dish, or for meal prep.
Ingredients (Serves 3–4)
For the chicken:

700 g (1.5 lb) boneless, skinless chicken thighs (or breast), cut into large cubes

Wooden skewers (soaked in water for 20 minutes if grilling)
For the marinade:

3 tbsp olive oil
-
1½ tbsp smoked paprika

1 tsp chili powder (adjust to taste)

1 tsp ground cumin
-
1 tsp garlic powder (or 3 cloves fresh garlic, minced)

1 tsp onion powder
-
¾ tsp salt
-
½ tsp black pepper
-
½ tsp dried oregano or thyme
-
Zest of 1 lemon
-
2 tbsp fresh lemon juice
Optional additions (as seen in image):

Bell pepper chunks

Red onion pieces
For garnish:

Fresh chopped parsley or cilantro

Lemon or lime wedges
Instructions

1. Prepare the Marinade
In a large bowl, whisk together olive oil, smoked paprika, chili powder, cumin, garlic, onion powder, salt, pepper, oregano, lemon zest, and lemon juice until well combined.
2. Marinate the Chicken
Add the chicken cubes to the marinade and toss until evenly coated.
Cover and refrigerate for at least 30 minutes, ideally 2–4 hours for maximum flavor.
3. Assemble the Skewers
Thread the marinated chicken onto skewers, alternating with bell peppers or onion if using. Do not overcrowd.
4. Cook the Skewers
Choose one method:
Grill:

Preheat grill to medium-high heat.

Grill skewers for 10–12 minutes, turning every 2–3 minutes, until nicely charred and cooked through (internal temp 75°C / 165°F).
Pan-sear (stovetop):

Heat a grill pan or skillet over medium-high heat with a little oil.

Cook skewers for 12–14 minutes, turning occasionally.
Oven + Broil option:

Bake at 200°C / 400°F for 18–20 minutes

Broil for 2–3 minutes at the end for char
5. Rest & Garnish
Remove from heat and rest for 3–5 minutes.
Sprinkle with fresh herbs and serve with lemon wedges.
