Matcha Green Tea Noodles with Shrimp and Egg

Ingredients

For the noodles

  • 200 g wheat noodles or somen noodles

  • 1–1½ teaspoons matcha powder

  • 1 tablespoon sesame oil

For the shrimp

  • 200 g shrimp, peeled and deveined

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 teaspoon sesame oil

For the egg

  • 2 large eggs

  • 1 teaspoon cooking oil

  • Pinch of salt

Vegetables

  • 1 small carrot, julienned

  • ½ cucumber, julienned

Topping

  • 1–2 tablespoons roasted sesame seeds

  • 1 tablespoon shredded nori (optional)

Optional light sauce (recommended)

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sugar or honey

  • 1 teaspoon sesame oil


Instructions

1. Cook the noodles

Bring a pot of water to a boil. Cook the noodles according to package instructions until al dente. Drain immediately and rinse under cold water to stop the cooking process.
In a small bowl, dissolve the matcha powder with 2–3 tablespoons warm water until smooth. Toss the cooled noodles with matcha mixture and sesame oil until evenly coated. Set aside.

2. Cook the shrimp

Heat a pan over medium heat. Add sesame oil, then add shrimp. Season with salt and black pepper.
Cook for 1–2 minutes per side until pink and opaque. Remove from heat and let cool slightly.

3. Prepare the egg

Beat the eggs with a pinch of salt. Heat a non-stick pan with a little oil.
Pour in the egg mixture, cook into a thin omelet. Remove, let cool, then slice into thin strips.

4. Prepare vegetables

Julienne the carrot and cucumber finely for a crisp texture. Keep raw for freshness.

5. Make the sauce (optional)

Mix soy sauce, rice vinegar, sugar, and sesame oil until well combined.

6. Assemble the bowl

Arrange the matcha noodles neatly in a bowl. Place shrimp, egg strips, cucumber, and carrot in separate sections on top.
Sprinkle roasted sesame seeds and shredded nori over the noodles. Drizzle lightly with the sauce if using.

  • Best served cold or at room temperature

  • Light, refreshing, and perfect for warm weather

  • Can substitute shrimp with tofu or grilled chicken
