Ingredients 

For the chicken

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • Salt and black pepper, to taste

  • 1/2 teaspoon dried oregano or Italian seasoning (optional)

For the bowl

  • 1 ripe avocado, sliced or cubed

  • 1 cup cherry tomatoes, halved

  • 2 cups cooked rice, quinoa, or mixed greens (optional base)

  • 1 tablespoon fresh lemon or lime juice

  • Fresh parsley or cilantro, chopped (for garnish)

Optional dressing

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice or apple cider vinegar

  • 1 teaspoon honey or maple syrup

  • Salt and black pepper, to taste

Instructions

Step 1: Prepare the chicken

Pat the chicken breasts dry with paper towels. Rub them with olive oil, then season evenly with garlic powder, paprika, salt, pepper, and oregano.

Step 2: Cook the chicken

Heat a skillet or grill pan over medium heat. Cook the chicken for 5–6 minutes per side, or until golden brown and fully cooked through (internal temperature reaches 165°F / 74°C).
Remove from heat and let rest for 5 minutes, then slice into strips.

Step 3: Prepare the bowl ingredients

While the chicken rests, slice the avocado and halve the cherry tomatoes. If using a grain base, warm the rice or quinoa slightly.

Step 4: Assemble the bowl

Divide the base (rice, quinoa, or greens) between two bowls. Arrange the sliced chicken, avocado, and tomatoes on top.

Step 5: Add dressing and garnish

Drizzle with lemon or lime juice and the optional dressing. Finish with fresh herbs and a pinch of salt and pepper.
