This Coconut Lime Fish Soup is light yet comforting, with tender white fish simmered in a fragrant coconut broth infused with ginger, garlic,

and fresh lime. It’s a balanced dish that feels both refreshing and satisfying, perfect for a wholesome lunch or dinner.

Ingredients

  • 1 lb (450 g) white fish fillets (cod, snapper, or halibut), cut into 1-inch pieces

  • 1 tablespoon vegetable oil

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece fresh ginger, minced

  • 1–2 red chilies, thinly sliced (optional, for heat)

  • 1 can (14 oz / 400 ml) coconut milk

  • 4 cups fish stock (or chicken broth)

  • 1 tablespoon fish sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon lime zest

  • Juice of 2 fresh limes

  • 2 teaspoons sugar

  • 1 cup cherry tomatoes, halved

  • 1 red bell pepper, thinly sliced

  • Salt and black pepper, to taste

  • 1/2 cup fresh cilantro, chopped (for garnish)

  • Lime wedges, for serving

Instructions

Step 1: Prepare the aromatics

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened and translucent. Stir in the garlic, ginger, and sliced chilies. Cook for another 1–2 minutes, until fragrant, being careful not to burn the garlic.

Step 2: Build the broth

Pour in the fish stock and coconut milk, stirring well to combine. Add the fish sauce, soy sauce, lime zest, and sugar. Bring the mixture to a gentle simmer and let it cook for about 5 minutes so the flavors can blend.

Step 3: Add vegetables

Add the cherry tomatoes and red bell pepper to the pot. Simmer for another 3–4 minutes, until the vegetables are just tender but still vibrant.

Step 4: Cook the fish

Gently add the fish pieces to the soup. Lower the heat and simmer for 4–6 minutes, or until the fish is opaque and flakes easily with a fork. Avoid stirring too much to keep the fish pieces intact.

Step 5: Finish with lime

Stir in the fresh lime juice. Taste the soup and adjust seasoning with salt and black pepper as needed. Add more lime juice or fish sauce if you prefer a brighter or saltier flavor.

To Serve

Ladle the soup into bowls and garnish generously with fresh cilantro. Serve hot with lime wedges on the side for extra freshness. This soup pairs well with steamed rice or can be enjoyed on its own as a light, nourishing meal.

  • For extra depth of flavor, lightly season the fish with salt and pepper before adding it to the soup.
