Ingredients

1 lb (450 g) raw shrimp, peeled and deveined

1 cup tomato juice (or Clamato for authentic flavor)

1/2 cup ketchup

1/4 cup fresh lime juice (about 3–4 limes)

1 small red onion, finely chopped

1 cup cucumber, diced

1 cup ripe tomatoes, diced

1/2 cup fresh cilantro, finely chopped

1–2 jalapeños, finely chopped (optional, adjust to taste)

1 ripe avocado, diced

1–2 tablespoons hot sauce (such as Valentina or Cholula)

Salt and black pepper, to taste
For serving (optional):

Tortilla chips or saltine crackers

Lime wedges

Instructions
1. Cook the shrimp
Bring a pot of salted water to a boil. Add the shrimp and cook for 2–3 minutes, or until they turn pink and opaque. Immediately drain and transfer the shrimp to ice water to stop the cooking process. Once cooled, chop the shrimp into bite-sized pieces.
2. Prepare the base
In a large bowl, combine tomato juice, ketchup, and fresh lime juice. Stir well until smooth.
3. Add vegetables and seasoning
Add the chopped onion, cucumber, tomatoes, cilantro, and jalapeños to the bowl. Season with salt, black pepper, and hot sauce. Mix gently to combine.
4. Add shrimp and avocado
Fold the cooked shrimp into the mixture. Just before serving, gently stir in the diced avocado to keep it fresh and creamy.
5. Chill and serve
Refrigerate the shrimp cocktail for 15–30 minutes to allow the flavors to meld. Serve cold in glasses or bowls with tortilla chips or crackers on the side.
