Ingredients
For the Shrimp Filling

450 g (1 lb) shrimp, peeled, deveined

1 tbsp olive oil

2 cloves garlic, minced

½ tsp paprika
-
½ tsp black pepper
-
½ tsp salt
-
1 tbsp lemon juice
-
2 tbsp fresh parsley or cilantro, chopped
For the Creamy Sauce
-
2 tbsp butter
-
2 tbsp all-purpose flour
-
1½ cups milk or light cream
-
½ cup sour cream
-
½ cup shredded Monterey Jack or mozzarella cheese
-
¼ tsp paprika
-
Salt and pepper to taste
For Assembly
-
8 small flour tortillas
-
1½ cups shredded cheese (Monterey Jack, mozzarella, or a blend)
-
Extra chopped parsley or cilantro, for garnish
Instructions

1. Cook the Shrimp
Heat olive oil in a skillet over medium heat.
Add garlic and sauté briefly until fragrant.
Add shrimp, paprika, salt, and pepper.
Cook for 2–3 minutes per side until pink and opaque.
Drizzle with lemon juice, sprinkle with herbs, then remove from heat and chop shrimp into bite-sized pieces.
2. Make the Creamy Sauce
In a saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute until lightly golden.
Gradually whisk in milk, stirring constantly until smooth and thickened.
Remove from heat and stir in sour cream, shredded cheese, paprika, salt, and pepper.
Mix until creamy and smooth.
3. Prepare the Filling
In a bowl, combine chopped shrimp with ½ cup of the creamy sauce.
Mix gently to coat evenly.
4. Assemble the Enchiladas
Preheat oven to 180°C / 350°F.
Lightly grease a baking dish and spread a thin layer of sauce on the bottom.
Place shrimp filling in the center of each tortilla, roll tightly, and place seam-side down in the dish.
5. Add Sauce & Bake
Pour remaining creamy sauce over the enchiladas.
Sprinkle evenly with shredded cheese.
Bake uncovered for 20–25 minutes, until bubbling and lightly golden on top.
6. Serve
Remove from oven and garnish with chopped parsley or cilantro.
Serve hot.
