Spicy Stir-Fried Squid with Basil

Ingredients

For the Squid

  • 500 g (1 lb) fresh squid, cleaned and cut into rings or bite-size pieces

  • 1 tsp salt

  • 1 tbsp lemon juice or vinegar (for cleaning)

For the Stir-Fry

  • 2 tbsp cooking oil

  • 3 cloves garlic, minced

  • 2–3 red chilies, sliced (adjust to taste)

  • 1 green chili or bell pepper, sliced

  • 1 tbsp chili paste or chili sauce

  • 1 tbsp oyster sauce

  • 1 tbsp soy sauce or fish sauce

  • ½ tsp sugar

  • ¼ tsp black pepper

  • 1 cup fresh basil leaves (Thai basil preferred)


Instructions

1. Prepare the Squid

Rinse squid with water, then rub with salt and lemon juice to remove odor.
Rinse again and drain well.

Optional: blanch squid in boiling water for 30 seconds, then drain immediately to keep it tender.


2. Heat the Pan

Heat oil in a wok or large pan over medium-high heat.
Add minced garlic and stir-fry until fragrant (about 20 seconds).


3. Add Chilies

Add red and green chilies.
Stir-fry briefly until aromatic.


4. Cook the Squid

Add squid to the pan.
Stir-fry quickly over high heat for 2–3 minutes until squid turns opaque.


5. Season

Add chili paste, oyster sauce, soy sauce (or fish sauce), sugar, and black pepper.
Stir well to coat everything evenly.


6. Add Basil

Turn off the heat.
Add basil leaves and toss quickly until just wilted.


7. Serve

Transfer to a plate and serve hot with steamed rice.
