Steamed Mixed Vegetables (Healthy & Simple)
Ingredients (serves 2–3):
1 cup broccoli florets
1 cup cauliflower florets
1 cup green beans, trimmed
1 cup asparagus, cut into bite-size pieces
1 large carrot, sliced into rounds
1–2 tablespoons olive oil or melted butter
2 cloves garlic, finely minced
Salt, to taste
Black pepper, to taste
Optional: chopped fresh parsley or herbs (parsley, dill, or thyme)
Optional: a squeeze of lemon juice
Instructions:
Prepare the vegetables
Wash all vegetables thoroughly. Cut broccoli and cauliflower into similar-sized florets so they cook evenly. Slice the carrot and trim the green beans and asparagus.
Steam the vegetables
Bring about 2–3 cm (1 inch) of water to a boil in a pot fitted with a steamer basket.
Add carrots first and steam for 3–4 minutes.
Add broccoli, cauliflower, green beans, and asparagus.
Cover and steam for another 4–6 minutes, until the vegetables are tender but still slightly crisp.
Season
Transfer the steamed vegetables to a large bowl. While still hot, drizzle with olive oil or melted butter. Add minced garlic, salt, and black pepper. Toss gently to coat everything evenly.
Finish and serve
Sprinkle with fresh herbs and add a light squeeze of lemon juice if desired. Serve immediately as a healthy side dish or light main.
Tips:
Do not over-steam; the vegetables should remain vibrant in color and slightly crunchy.
For extra flavor, sprinkle a little grated Parmesan cheese or chili flakes before serving.
This dish pairs well with grilled chicken, fish, or rice dishes.
