Do This Extra Step Before Boiling Chicken Breast for Juicy, Tender, and Not-Dry Results
Boiled chicken breast is a common dish in weight-loss and diet-friendly meals. However, many people struggle with the meat turning dry and bland. To keep chicken breast juicy, tender, and flavorful, follow these simple tips.
The first step is choosing the right ingredient. Chicken breast is considered white meat and is rich in protein — an essential nutrient for cell structure, growth, and brain development.
Compared to other chicken parts like wings, thighs, neck, or organs (which contain more fat and cholesterol), chicken breast offers higher nutritional value.
100g of chicken breast provides about 18g of protein, B vitamins (especially B12), iron, zinc, and very little fat.
Pick chicken breast with a natural pinkish color, a glossy surface, firm yet slightly springy texture, and minimal white tendons. Less tendon means leaner meat with more protein.
Trim off excess fat.
Prepare a brine solution with 4–5% salt and sugar (e.g., 500ml water with 20–25g salt and 20–25g sugar). The water should fully cover the meat.
Soak the chicken breast for 15–20 minutes. For extra flavor and to remove any unpleasant odor, add a few slices of shallot, some lemon juice, or a splash of white wine.
This brining method, commonly used by Western chefs, helps the chicken retain moisture and stay tender. After soaking, rinse the chicken well.
Bring water to a boil with crushed ginger and lemongrass. Season with a pinch of salt or broth powder to taste.
Once the water boils, add the chicken breast. The high temperature quickly seals the meat’s surface, locking in nutrients and natural sweetness.
When the water boils again, reduce to low heat and simmer gently for 5–6 minutes.
Turn off the heat, cover the pot tightly, and let the chicken rest in the hot water for another 15 minutes.
This method ensures the chicken cooks evenly, stays juicy, and doesn’t dry out.
The boiled chicken breast will be perfectly cooked, tender, and moist.
In summary: To avoid dry chicken breast, choose fresh meat, soak it in a salt-sugar brine (optionally with shallot, lemon, or wine for better flavor), then boil it in hot water and let it rest. This way, the chicken retains nutrients, natural sweetness, and a juicy texture.
