  • 700 g beef sirloin, chuck, or ribeye, cut into large cubes

  • 250 g mushrooms (button or cremini), sliced

  • 1 small onion or shallot, finely diced

  • 3 cloves garlic, minced

For the creamy sauce

  • 200 ml heavy cream

  • 120 ml beef stock

  • 1 tsp Dijon mustard (optional)

  • ½ tsp paprika

  • ½ tsp dried thyme

  • Salt and black pepper, to taste

  • Fresh parsley or chives, chopped

1. Prepare the beef

  • Pat the beef cubes completely dry.

  • Season generously with salt and black pepper.

  • Lightly dust with flour if using (shake off excess).

2. Sear the beef

  • Heat olive oil in a large skillet over medium-high heat.

  • Add beef cubes in batches (do not overcrowd).

  • Sear 2–3 minutes per side until deeply browned.

  • Remove beef from the pan and set aside.

3. Cook the mushrooms

  • In the same pan, lower heat to medium.

  • Add mushrooms and cook until browned and their moisture evaporates.

  • Add onion and cook 2–3 minutes until soft.

  • Stir in garlic and cook 30 seconds until fragrant.

4. Build the sauce

  • Pour in beef stock and scrape up browned bits from the pan.

  • Add cream, Dijon mustard, paprika, and thyme.

  • Stir well and bring to a gentle simmer.

5. Finish the dish

  • Return beef (and any juices) to the pan.

  • Simmer gently 5–7 minutes until the sauce thickens and beef is tender.

  • Taste and adjust seasoning.

  • Remove from heat and rest 2 minutes before serving.
