Ingredients:

4 chicken thighs or breasts, bone-in or boneless

1 cup coconut milk

2 tbsp olive oil

1 small onion, chopped

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1–2 tsp chili powder (adjust to taste)

1 tsp paprika

1 tbsp lime juice

Salt and black pepper to taste

Fresh cilantro for garnish




Instructions:

Heat olive oil in a large skillet over medium heat. Sauté onion, garlic, and ginger until fragrant and softened. 🧄🧅
