Garlic is one of the most essential ingredients in kitchens around the world. It adds aroma and depth to countless dishes, from soups and stir-fries to sauces and marinades. However, many people have experienced the frustration of buying fresh garlic only to find it sprouting or spoiling after a short time.
According to a professional chef, garlic can actually stay fresh for up to six months if it is stored correctly — and surprisingly, the refrigerator is not the best place to keep it.
Many people assume that storing garlic in the refrigerator will help it last longer. However, the cool and humid environment inside a fridge can cause garlic to sprout faster or lose its flavor and texture.
Experts say garlic prefers a cool, dry environment at room temperature, rather than the damp conditions often found inside refrigerators.
Chef Jerry James Stone, a plant-based chef whose recipes have appeared on platforms such as Discovery Channel and Whole Foods, shared several simple tips to extend the life of garlic.
Garlic lasts much longer when it remains in whole bulbs with the skin intact. Once garlic is peeled or chopped, it spoils much faster.
For this reason, it’s best to peel or crush garlic only when you are ready to cook.
Garlic should be stored at room temperature in a cool and dry location. Moisture is the enemy of garlic because it can lead to mold or premature sprouting.
A pantry shelf, kitchen cabinet, or well-ventilated corner of the kitchen is often ideal.
Too much sunlight can warm garlic and encourage it to spoil faster. Instead, keep it in a dark or shaded place where the temperature stays stable.
Garlic needs air circulation to stay fresh. Avoid sealing it in airtight containers or placing it in closed drawers where air cannot move freely.
A mesh bag, basket, or open container allows airflow and helps maintain the garlic’s quality.![]()
When stored properly under the right conditions — cool, dry, dark, and well-ventilated — whole garlic bulbs can remain usable for as long as six months.
However, once garlic is peeled, crushed, or chopped, its shelf life becomes much shorter and it should be used quickly.
Garlic may seem like a simple kitchen staple, but storing it incorrectly can lead to unnecessary waste. By keeping garlic whole and storing it in a cool, dry, and well-ventilated space, you can extend its freshness for months without relying on the refrigerator.
Sometimes the best kitchen tricks are the simplest ones — and they can help you save both money and ingredients.
