Seafood Linguine with Shrimp and Mussels

Ingredients (Serves 2–3)
For the Pasta

250 g linguine (or spaghetti)

1 tbsp salt (for boiling water)
For the Seafood

200 g shrimp, peeled and deveined
-
300 g mussels, cleaned and debearded
-
2 tbsp olive oil
-
3 cloves garlic, minced
-
½ tsp chili flakes (optional)
-
Salt and black pepper to taste
For the Sauce
-
1 cup cherry tomatoes, halved
-
½ cup white wine (or seafood broth)
-
2 tbsp butter
-
1 small shallot or onion, finely chopped
-
1 tbsp lemon juice
-
¼ cup chopped fresh parsley
-
Extra olive oil for drizzling
Instructions

1. Cook the Pasta
-
Bring a large pot of salted water to a boil.

Add linguine and cook for 8–10 minutes until al dente.

Reserve ½ cup pasta water for the sauce.
-
Drain and set aside.
2. Cook the Seafood
-
Heat olive oil in a large pan over medium-high heat.
-
Add garlic and shallots, sauté for 30 seconds until fragrant.
-
Add shrimp, season with salt and pepper, and cook for 2 minutes until pink.

Add mussels and pour in white wine.
-
Cover the pan and let mussels steam for 3–4 minutes until they open.

Remove and discard any mussels that remain closed.
3. Prepare the Sauce

Add cherry tomatoes to the pan and cook until they soften slightly.

Add butter, lemon juice, and a splash of pasta water.
-
Stir to create a glossy, silky sauce that coats the seafood.
-
Taste and adjust seasoning (salt, pepper, chili flakes).
4. Combine Pasta and Sauce

Add the cooked linguine directly into the pan.
-
Toss gently to coat the pasta in the sauce.
-
Add chopped parsley and drizzle a bit of olive oil on top.
-
Toss again until everything is evenly mixed.
5. Plate and Serve

Transfer to serving plates.

Add shrimp and mussels on top.
-
Garnish with extra parsley and grated Parmesan (optional).

Serve with lemon wedges.
