Ingredients:
-
2 lbs beef chuck, cut into 1-inch cubes š„©
-
Salt and pepper, to taste š§
-
3 tablespoons olive oil
-
1 medium onion, chopped š§
-
3 cloves garlic, minced š§
-
4 cups beef broth
-
2 cups carrots, sliced š„
-
2 cups potatoes, diced š„
-
2 cups celery, sliced
-
2 tablespoons tomato paste š
-
1 teaspoon dried thyme šæ
-
1 teaspoon dried rosemary
-
1 bay leaf
-
1/4 cup all-purpose flour (optional, for thickening)
-
Fresh parsley, chopped, for garnish šæ

Instructions:
Step 1: Prepare the Beef
-
Begin by seasoning the beef cubes with salt and pepper on all sides.
-
Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Once the oil is hot, add the beef cubes in batches, being careful not to overcrowd the pot. Brown the beef on all sides, which should take about 5-7 minutes. Remove the beef and set it aside.
Step 2: Sauté the Vegetables
-
In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent.
-
Add the minced garlic and cook for an additional minute, stirring constantly to avoid burning.
Step 3: Simmer the Stew
-
Return the browned beef to the pot, along with any juices that have accumulated on the plate.
-
Stir in the tomato paste, dried thyme, dried rosemary, and bay leaf. Allow the mixture to cook for 2-3 minutes to bring out the flavors.
-
Pour in the beef broth and bring the stew to a simmer. Once it starts to bubble, reduce the heat to low and cover the pot. Let the stew simmer for 1 ½ to 2 hours, or until the beef is tender.
Step 4: Add the Vegetables
-
Add the sliced carrots, diced potatoes, and sliced celery to the pot. Stir everything together and continue to simmer for an additional 30-45 minutes, or until the vegetables are tender.
Step 5: Optional Thickening
-
If you prefer a thicker stew, you can make a slurry by mixing 1/4 cup of all-purpose flour with a small amount of cold water until smooth. Gradually add this mixture to the stew and stir well. Allow the stew to simmer for an additional 10 minutes to thicken.
Step 6: Final Seasoning
-
Remove the bay leaf and taste the stew. Adjust the seasoning with more salt and pepper as needed.
-
Ladle the stew into bowls and garnish with freshly chopped parsley.
Serving Suggestions:
Serve this delicious Beef Stew with a warm, crusty bread or over a bed of mashed potatoes for a truly comforting meal. You can also pair it with a simple green salad to balance the richness of the stew.
Tips:
-
Beef Chuck: Beef chuck is ideal for stews because it becomes incredibly tender and flavorful when slow-cooked. However, other cuts like brisket or round can also work well.
-
Slow Cooker Option: If you prefer a hands-off approach, you can transfer all the ingredients to a slow cooker after browning the beef and sautéing the vegetables. Cook on low for 6-8 hours or on high for 3-4 hours.
-
Flavor Variations: For added depth of flavor, you can include a splash of red wine when simmering the stew. This will create a rich, savory broth that enhances the dish.
This Beef Stew is the epitome of comfort food—rich, flavorful, and perfect for any occasion. It’s a dish that brings warmth and joy with every bite, making it a family favorite that’s sure to be enjoyed by all.
