Ingredients

  • 1 lb (450 g) shelf-stable potato gnocchi

  • 1 medium zucchini, sliced into half-moons

  • 1½ cups cherry or grape tomatoes

  • 1 red bell pepper, sliced

  • 1 yellow or orange bell pepper, sliced

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried Italian seasoning

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • ¼ teaspoon red pepper flakes (optional)

  • ¼ cup grated Parmesan cheese (optional)

  • Fresh basil or parsley, for garnish

Instructions

1.  Preheat the Oven

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.

2.  Prepare the Ingredients

Place the gnocchi, zucchini, tomatoes, and bell peppers directly onto the baking sheet.

3.  Season

Drizzle the olive oil evenly over everything. Add the minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes if using.

4.  Toss to Coat

Use clean hands or a spatula to toss everything together until the gnocchi and vegetables are evenly coated with oil and seasonings. Spread into an even layer to ensure proper roasting.

5.  Roast

Roast in the preheated oven for 20–25 minutes, stirring once halfway through, until:

-  The gnocchi are lightly crispy on the outside

-  The vegetables are tender and slightly caramelized

6.  Finish and Serve

Remove from the oven and sprinkle with grated Parmesan cheese if desired. Garnish with fresh basil or parsley before serving.
