According to research by scientists at the University of Illinois (USA), reheated oil undergoes fat breakdown, leading to the oxidation of free fatty acids and the release of acrolein toxins that cause cancer. Furthermore, such oil loses its nutritional value because heat destroys essential nutrients.
When reused, burnt residues accumulate in the oil and stick to the food. Consuming these residues increases the risk of cancer. Trying to save a little can end up putting the whole family’s health in danger.
