1. Heavily Scratched, Cracked, or Warped Cutting Boards
Adam James Pollock warns that plastic cutting boards with numerous scratches or cracks provide an ideal breeding ground for harmful bacteria like Salmonella and Listeria. According to Pollock, bacteria on plastic cutting boards can survive much longer than on wooden ones. He cites a University of Arizona study which found that while bacteria on wooden boards often absorb into the wood and die within 3–10 minutes, they can rapidly multiply on plastic boards overnight.
Moreover, warped plastic boards, often caused by high temperatures (e.g., washing with hot water, exposure to heat or hot food), or cracked boards may release microplastics. A study published in Environmental Science & Technology found that chopping vegetables on plastic cutting boards can release significant amounts of microplastics into food, posing serious health risks such as endocrine disruption and an increased risk of cancer. Additionally, scratched or cracked boards are harder to clean and more likely to retain food residue.
2. Discolored or Moldy Cutting Boards
Discoloration or mold growth on plastic cutting boards is a clear sign that they need to be replaced immediately. Boards made from low-quality recycled plastics discolor and yellow more quickly, increasing the risk of chemical exposure. These stains are not only unsightly but also indicate that the plastic is breaking down and releasing harmful chemicals, some of which may cause cancer and alter the flavor of food.
Pollock also emphasizes that plastic cutting boards, like wooden ones, can develop mold, especially when they remain damp, are heavily scratched, or are improperly cleaned. Mold not only produces an unpleasant odor but also releases aflatoxins—highly carcinogenic toxins warned against by the WHO. These toxins can lead to poisoning and damage the liver and kidneys while reducing the nutritional value and flavor of food.
3. Unpleasant Odors
According to Pollock, plastic cutting boards tend to absorb odors from foods like meat, fish, and spices. If your board emits an unpleasant smell even after thorough cleaning, it could indicate bacterial or mold contamination within its scratches or cracks. These odors not only affect food quality but also pose health risks, particularly to the digestive and respiratory systems.
Additionally, if the board smells burnt or like old plastic, it may be made of low-quality materials, often recycled plastic. These odors arise from the release of harmful chemicals like BPA and phthalates when exposed to high heat. Research from the University of California suggests that these chemicals can disrupt hormones and increase cancer risk.
